The Region & Terroir
Autumn Amber hails from Lincang City in Yunnan, one of China’s most distinguished coffee-growing regions. The area’s subtropical, highland monsoon climate provides optimal conditions for slow cherry maturation, with an average elevation of 1,940 meters, an annual temperature of 19.5°C, and rainfall of 1,335 mm.
The Tiankeng Base, one of Autumn Amber’s key growing areas, sits at over 1,600 meters. Its volcanic soil, composed of decomposed volcanic ash, is exceptionally rich in potassium, phosphorus, calcium, magnesium, and iron—minerals that contribute to enhanced acidity, sweetness, and flavour clarity. The high-altitude conditions create significant day-night temperature variations, slowing the development of the coffee cherries and intensifying their complexity.
Processing – Precision & Innovation
Autumn Amber undergoes a yeast-assisted washed fermentation designed to enhance the coffee’s sweetness and structure. After hand-harvesting, the cherries are floated in spring water to remove defects before pulping. The remaining mucilage is then fermented with carefully selected yeast strains for approximately 24 hours. This controlled fermentation refines the coffee’s flavour expression, promoting clean, fruit-forward characteristics while retaining balance and depth.
Following fermentation, the beans are washed thoroughly to remove any remaining mucilage, then dried slowly at low temperatures to a final moisture content of 11-12%, ensuring longevity and stability.
