POL, founded by Olina Cai, is a Yunnan-based specialty coffee business that focuses on elevating the natural qualities of coffee through innovative techniques. The cherries for Blue Iris are handpicked at peak ripeness from high-altitude farms (1300-1500 masl) in Mangshi, Dehong. They undergo a unique fermentation process in anaerobic vessels, where the temperature and humidity are carefully controlled to preserve the coffee’s delicate floral and fruity notes.

After fermentation, the cherries are sun-dried on raised beds for two weeks, allowing time, sunlight, and careful craftsmanship to infuse the coffee with its unparalleled complexity. This attention to detail highlights the synergy of nature and innovation, resulting in a coffee that is as beautiful and aromatic as the iris flowers it evokes.
