Background Information
Located in the breathtaking Brunca region, Corazón de Jesús Micromill is a testament to the Alvarado Fonseca family’s dedication to producing high-quality coffee with innovation and sustainability at its heart.
Since their establishment in 2015, the family has gained recognition on both national and international stages,
earning accolades like 2nd Place in the 2024 Costa Rica Cup of Excellence for Honeys and Naturals and 1st Place in the 2022 Costa Rica National Barista Championship.
This lot showcases Catuai, a Bourbon mutation renowned for thriving at high altitudes.
Grown amidst the fertile soils of Chirripó, the cherries are hand-picked at peak ripeness and undergo the Natural Reposado process, a pioneering method developed by the family through months of experimentation.
The Natural Reposado Process
The journey begins with meticulous cherry selection. Freshly picked cherries are placed in bags for a controlled fermentation at 18–20°C for two days, initiating a slow and transformative process.
On the third day, the cherries are spread across raised beds for 4–7 days of slow sun drying, preserving their flavours and aromas.
Once the cherries reach the desired dehydration, they undergo a second fermentation, inspired by winemaking.
This phase lasts 8–10 days at slightly higher temperatures (20–22°C) in sealed bags, imparting a rich complexity to the cup.
Finally, the cherries are spread out on drying patios for 15 additional days, where careful attention ensures even drying and flavour preservation.
This multi-stage process results in a coffee that embodies the terroir of Brunca while reflecting the family’s dedication to their craft.
