Princess Peacock, from the esteemed Dagu Coffee, is an ode to creativity and precision in coffee processing. This natural process coffee delights with its playful notes of goji berry, peach gum, and rum & raisin, making it a vibrant and expressive cup to savour.
Dagu Coffee, located in Menglian, Yunnan, is spearheaded by Hong Ye, a female producer whose vision and commitment have transformed her farm into one of Yunnan’s leading specialty coffee estates. Spanning over 3,500 acres, the estate dedicates 8 acres exclusively to cultivating Geisha, alongside other high-quality varieties like Catimor.
The ‘red wine-natural’ process used for Princess Peacock involves fermenting ripe cherries at low temperatures to develop the coffee’s signature wine-like flavours. After fermentation, the cherries are dried on racks under controlled conditions, further enhancing their sweet and layered complexity. This meticulous approach has earned Princess Peacock recognition in the Best of Yunnan Green Coffee Competition, where it placed 7th in the unwashed category in both 2022 and 2023.
This coffee is as lively and expressive as its namesake, the Peacock Princess, embodying the rich flavours and vibrant culture of Menglian, Yunnan.
