The Story Behind Don Pilo
Grown in La Libertad, Huehuetenango, one of Guatemala’s most celebrated coffee regions, Don Pilo is a washed lot from Finca Terrazas, a farm surrounded by the El Injerto River and shaded by a diverse mix of native trees.
The unique terroir, high elevation, and careful post-harvest processing give this coffee its signature clarity and depth of flavour.
During harvest, cherries are hand-selected and floated to remove impurities before undergoing a meticulously controlled washed process.
Fermented for 25 hours in dry tanks, the beans develop a refined sweetness and a silky texture before drying on patios.
A Legacy of Excellence
The Vides family, pioneers in Guatemalan specialty coffee since 1958, operate six farms in Huehuetenango, including Finca Terrazas.
