The Story of Don Sabino Micromill
Nestled in Costa Rica’s Central Valley, the Don Sabino Micromill is a father-son operation built on generations of coffee-growing expertise. Though the mill was established in 2011, Steven Vargas and his father have dedicated their lives to coffee, meticulously cultivating and processing a range of exceptional varieties.
They manage several farms, but Finca El Llamarón stands out as a dedicated SL28 plot, growing at 1500 masl in the Fraijanes region. With deep family roots spanning five generations, their approach is both traditional and progressive, ensuring precision and care in every step.
A Thoughtfully Crafted Natural Process
At Don Sabino Micromill, processing coffee is an art.
Cherries are hand-harvested at peak ripeness and carefully sorted using floatation tanks to remove defects.
The best cherries are then dried whole, laid out on raised beds, and turned frequently for 30–40 days, allowing the fruit’s natural sugars to infuse into the beans.
The result? A coffee that’s deeply sweet, vibrant, and complex, with layers of fruit and confectionary sweetness.
A Rare Expression of SL28
While SL28 is traditionally associated with Kenya, this Costa Rican-grown expression showcases a whole new side of the variety. Expect an intensely juicy espresso, with ripe cherry notes, a tangy tangelo-like acidity, and a delightfully sweet, candy-like finish. Whether sipped as a straight shot or paired with milk, El Llamarón - SL28 is a rare treat that deserves to be savoured.

All pours are 30 second intervals
1st pour of 30g, followed by 3 pours of 70g
