Background Information
Nestled in the southern Ethiopian Gedeo zone, the village of Haru is home to the Harusuke washing station, established in 2017 by Abreham Mengiste.
This station serves 2,820 smallholder farmers, who cultivate coffee in their backyard gardens along the Goto River.
Ethiopia’s naturally organic environment provides the perfect conditions for cultivating heirloom varieties, renowned for their small bean size and complex fruit profiles.
The meticulous washed process begins with hand-picked red cherries, depulped within 8–12 hours of harvest.
The cherries undergo fermentation in tanks for 48–72 hours, where any floaters are removed to ensure quality.
After fermentation, the coffee is thoroughly washed, dried for 8–10 days on African beds, and rotated frequently to achieve uniform drying.
Once the beans reach the ideal moisture content, they are transported to Addis Ababa for cleaning, hulling, and polishing.
The final stages include sorting by size, density, and colour to ensure only the finest beans make their way to your cup.
