About the Region
Coffee in Koke is grown by smallholder farmers in what is often called “garden coffee”, where trees grow around farmers’ homes and within natural forest systems. Cherries are harvested by hand and delivered to the washing station where they are carefully sorted before drying.
This region’s unique climate plays a big role in the final cup. Warm sunny days paired with cool nights create ideal drying conditions, allowing the fruit sugars of the cherry to slowly infuse into the beans.
About the Lot
For the Violet profile, cherries are dried whole on raised African beds for 18-30 days, allowing the coffee to absorb the fruit sweetness from the cherry pulp and skin.
Throughout drying the cherries are regularly turned to ensure even moisture reduction and preserve clarity in the cup. Once dried to around 10-12% moisture, the beans are stored in their dried cherry pods before milling to maximise flavour development.
The result is a vibrant and elegant natural coffee with delicate lilac florals, juicy grape sweetness and tropical papaya character, delivering a beautifully clean and expressive filter experience.
