The Region & Terroir
Muje Mesina originates from the Guji Zone in Ethiopia, a region renowned for its diverse microclimates and high-altitude coffee production.
The coffee is grown in Muje Village, located 17 km from Adola town, where 1,980 smallholder farmers cultivate coffee in their backyards
before delivering their harvest to the Muje Mesina washing station, situated along the Awata River.
Ethiopian coffee production is inherently organic, with landrace varieties adapting naturally to the environment.
Farmers rely on organic fertilisers and natural pest control, preserving both soil health and biodiversity.
Processing – A Commitment to Quality
At Muje Mesina, only the ripest cherries are hand-picked and depulped within 8 to 12 hours of harvesting.
The coffee then undergoes a 48 to 72-hour fermentation process, during which floaters are removed to ensure uniformity.
Following fermentation, the parchment coffee is thoroughly washed to remove mucilage, then transferred to African drying beds, where it dries for 8 to 10 days.
The drying process is carefully monitored, with regular hand-picking and rotation to ensure even drying.
Once the coffee’s moisture content reaches 10-12%, it is moved to a warehouse in Addis Ababa for pre-cleaning, hulling, polishing, and sorting.
Muje Mesina has built two underground water sources, ensuring sustainability and supporting the local community.
The station’s commitment to quality has earned accolades, including the 2019 African Fine Coffees Association’s Taste of Harvest award and the 2018 World Barista Championship award.
Flavour Profile
Muje Mesina presents a rich, structured espresso profile, highlighting the classic vibrancy of Ethiopian washed coffees.
The cup features a bright apricot acidity, a juicy orange mid-palate, and a deep brown sugar sweetness that lingers, creating a well-rounded and balanced espresso experience.
