Over the past year, we’ve had the privilege of working closely with Natanael Charis, affectionately known as Natcha—one of Indonesia’s most exciting and innovative coffee producers.

His approach to coffee processing continues to amaze us, and with each release, we’re blown away by the clarity, complexity, and expressive flavours of his coffees.

At his state-of-the-art production facility in Aceh, North Sumatra,

Natcha experiments with advanced fermentation techniques, including Carbonic Maceration and wine yeast fermentation, methods inspired by the wine industry that elevate the depth and structure of his coffees.

For Natcha Lot 8, the cherries undergo 36 hours of Carbonic Maceration with red wine yeast, followed by a thermal shock process to lock in its distinct flavour profile.

 This meticulous approach results in a lusciously floral and fruit-driven cup, with layers of delicate peach, elegant rose tea, and a creamy vanilla slice sweetness.

Beyond his mastery of processing, Natcha is dedicated to empowering smallholder farmers by sharing knowledge, improving processing techniques, and ensuring a sustainable future for Indonesian specialty coffee.

His commitment has rightfully placed him among the leading figures in the global coffee scene.

For Filter/Batch Brew, we suggest 1:16 coffee to water ratio as a starting point.
