Background Information
Five years ago, Nestor Lasso and his brother Adrian took over their family farm and embarked on a journey of specialty coffee experimentation, moving beyond the traditional coffee their parents once grew.
Teaming up with fellow producer Jhoan Vergara, they established El Diviso, a partnership that has propelled them to the forefront of the coffee industry.

The Ombligon variety is a unique hybrid of coffee that has been developed specifically to thrive in the diverse climates and rich soils of the Pitalito region in Huila.
This variety is known for its ability to express vibrant and complex flavours, making it ideal for experimental processing methods like the thermal shock and anaerobic techniques that Nestor employs.
The result is a coffee with remarkable clarity, sweetness, and an excitingly fruity profile.

This Ombligon lot is processed using a highly detailed and precise method:

- Step 1: Cherries are picked at optimal maturity, with Brix degrees between 21 and 24.
- Step 2: Cherries are placed in open plastic tanks for 48 hours, where the must (juice) is constantly recirculated to maintain a Brix level of 19 and a pH above 5.
- Step 3: After this, the cherries are placed in cold water, and any low-quality cherries are manually removed.
- Step 4: The cherries undergo a thermal shock with water at 50°C to loosen their molecular structure and initiate fermentation. Brewers' yeast is then added to kickstart anaerobic fermentation, which lasts 38 hours.
- Step 5: Cherries are mechanically dried for 12 hours until reaching 18% moisture content, then stabilised in closed plastic bags for two days.
- Step 6: The cherries finish drying on marquesinas (raised beds) for approximately 15 days, reaching a moisture content of 10.5-11.5%.

This meticulous process has resulted in a coffee with standout clarity, sweetness, and a playful complexity.
