Background Information
This spectacular coffee is the result of meticulous care and attention to detail by Sebastian Gomez, a dedicated coffee producer at the farm La Divisa in Circasia, Quindio, Colombia. The cherries for this microlot are harvested at peak ripeness and subjected to a rigorous selection process, including floating and hand-sorting, to ensure only the best are used.
The cherries then undergo 30 hours of underwater fermentation, a technique that enhances the coffee’s clarity and amplifies its elegant flavour profile. After fermentation, the parchment is gently washed and dried in temperature-controlled conditions to achieve perfect moisture levels.
The variety, Caturra, is a natural mutation of Red Bourbon, originating from Minas Gerais, Brazil. Known for its higher yield and resistance to plant diseases compared to Bourbon, Caturra produces coffees with bright acidity and smooth sweetness, which are beautifully showcased in this microlot.
