The Story Behind Solis & Cordero
The Solis & Cordero Micromill was founded in 2018 by Iván Gerardo Solís Rivera and his family,
born from decades of expertise in coffee growing, processing, and quality control.
Their vision? To empower smallholders in the Santos region by providing world-class processing, traceability, and quality-enhancing techniques.
Beyond producing outstanding coffee, the mill offers a full spectrum of services,
from exporting and consulting to roasting and selling coffee domestically.
For the farmers they work with, this means an opportunity to bring unique, high-quality coffee to the world stage.
What is Candy Natural?
This Catuai lot is so intensely sweet that Iván and his team coined the process “Candy Natural.”
It’s a method designed to amplify the coffee’s natural sugars and fruit complexity while maintaining clarity in the cup.
The process begins with meticulously handpicked cherries, which are:
• Inspected and washed to remove any defects.
• Fermented in water inside sealed anaerobic tanks for 108 hours, enhancing depth and complexity.
• Dried on raised beds for 20 days, allowing the sugars to fully develop and integrate.
