Background Information
The Indian component of this blend comes from the renowned Ratnagiri Estate, where producer Mr. Ashok Patre refers to this innovative process as a Culture Process.
Here, coffee cherries are harvested at peak ripeness, with a brix level of 25.2.
After floating the cherries to remove defects, they are co-fermented in stainless steel tanks with fresh rose, jasmine, and lavender, alongside a specific strain of yeast and lactic acid bacteria.
This 72-hour carbonic maceration in a CO₂-rich environment infuses the coffee with its enchanting floral notes.
Following fermentation, the coffee is dried slowly over 29 days on raised beds, where it is accompanied by more fresh flowers, ensuring the flavours are both deep and persistent.
The Ethiopian component hails from the Hambela washing station in Guji, where cherries are meticulously picked by hand from smallholder farms, each averaging 120 coffee trees.
These farms operate with a natural ecosystem approach, using compost and deadfall to enrich the soil.
The coffee is naturally processed, with cherries carefully dried on raised beds under the watchful eye of farmers dedicated to quality and sustainability.
Together, these two components unite to create a coffee that’s as unique as it is delightful—bursting with floral aromas and a delicate complexity that’s perfect for summer.
